Oat, Amaranth & Pepita bar
Packed with fibre, lower in sugar than many shop brought bars, these are a delicious snack the whole family will love.

- blender or stick blender
Ingredients
- 1 small-med banana ripe or overripe
- 4 dates pitted
- 1 tbsp almond butter
- 1 tbsp maple syrup
- 1 tbsp coconut oil
- 1 cup rolled oats
- 1 cup puffed amaranth
- 1/3 cup pepitas
- 1 tsp orange zest lime or lemon will work too.
- pinch cinnamon
- pinch cardamon
Instructions
- Preheat oven to 160 degrees
- Add banana, dates, nut butter, coconut oil & maple syrup and blend until smooth
- In a bowl mix remaining ingredients & add blended mixture to combine
- Pour mixture onto a lined baking tray and flatten until level
- Bake for 20-30 minutes or until golden brown
