Naked Greens & Feta Pie
A light and flavourful meal that's perfect for any time of day. Made with fresh, leafy greens and topped with tangy feta cheese, this pie is both delicious and nutritious.

Ingredients
- 5 cups mixed chopped greens I use kale, silverbeet & sorrell
- 1 leek sliced
- 1 small onion sliced
- 1 clove garlic sliced
- 4 large eggs
- 25g grated cheese
- 90g low fat feta crumbled
- 1/4 cup mint leaves chopped
- 1/2 lemon, zest
- 1 tsp olive oil
Instructions
- Gently sauté onions and leek with oil for three minutes
- Add greens and cook for a few more minutes
- Place a lid on the pan for a minute so it cooks nicely, then let cool so the eggs don't scramble when they are added
- Mix eggs, feta, parmesan, mint and lemon zest, then add onion and greens
- Line a pan dish with non-stick baking paper and add mixture
- Bake in the over until the eggs are cooked (about 30 mins)
