Green Smoothie Bowl

This smoothie bowl is a great way to start your day off on the right foot. The addition of almond milk and avocado creates a creamy and protein-rich base, while the toppings – like chia and sunflower seeds add texture and flavour.

Equipment

  • blender
  • mixing bowl

Ingredients

  • 1/4 avocado
  • 1/3 medium banana
  • 3 fresh strawberries
  • 1/2 cup mixed berry (fresh or frozen)
  • 1 cup leafy green like spinach or chard etc
  • 1/3 cup parsley leaves
  • 1 tsp chia seeds
  • 1/2 cup almond milk
  • 1 pitted date, chopped
  • 2 tsp toasted sunflower seeds
  • 2 tsp toasted shredded coconut
  • 3 ice cubes

Instructions

  • Soak the chia seeds and the date in 2 tablespoons of water for a few minutes
  • In a high speed blender process avocado, banana, strawberries, greens, chia, date and almond milk until smooth
  • Pour into bowl and top with mixed berries, sunflower seeds and coconut
