This smoothie bowl is a great way to start your day off on the right foot. The addition of almond milk and avocado creates a creamy and protein-rich base, while the toppings – like chia and sunflower seeds add texture and flavour.

Ingredients
- 1/4 avocado
- 1/3 medium banana
- 3 fresh strawberries
- 1/2 cup mixed berry (fresh or frozen)
- 1 cup leafy green like spinach or chard etc
- 1/3 cup parsley leaves
- 1 tsp chia seeds
- 1/2 cup almond milk
- 1 pitted date, chopped
- 2 tsp toasted sunflower seeds
- 2 tsp toasted shredded coconut
- 3 ice cubes
Instructions
- Soak the chia seeds and the date in 2 tablespoons of water for a few minutes
- In a high speed blender process avocado, banana, strawberries, greens, chia, date and almond milk until smooth
- Pour into bowl and top with mixed berries, sunflower seeds and coconut
