Buckwheat Pancakes w Banana & Blueberries
Made with buckwheat flour, these pancakes are a gluten-free and high-fibre alternative to traditional pancakes. The addition of banana and blueberries adds natural sweetness and a boost of antioxidants.

Ingredients
- 1 banana, mashed
- 1/3 cup milk any kind
- 1 tbsp maple syrup
- 1/2 cup buckwheat flour
- 1 tsp baking powder
- 1 pinch salt
- 1 egg
- 1/3 cup reduced fat yoghurt
- 1/2 cup blueberries
- coconut oil spray
Instructions
- Whisk banana, milk, maple syrup and egg together then add buckwheat, baking powder and salt until well combined.
- Spray a non stick pan lightly with coconut oil spray
- Cook on a low – medium heat until there's a good colour on underside and flip.
- Mixture will make 4 small – medium pancakes.
- Serve with blueberries and natural yoghurt
